About Our Aged Beef...

All our beef is aged on the carcass for 9-20 days before processing into individual cuts. The ageing process evaporates moisture from the meat concentrating flavour and giving the meats natural enzymes time to tenderize the beef naturally. This is the traditional method of aging beef and we believe the best way.

This process is no longer in common usage in the retail sector due to the weight loss that occurs and the added cost of the aging process. However we believe that it is the only way to process beef.


About our Cows

We run Hereford Simmentel cross beef animals as well as some jersey nurse cows.
We source Angus P2 Heifer beef to supplement our production as required.
